Hand-shaped pasta is…. well, exactly how it sounds! From orecchiette (little ears) to culurgiones (filled pasta), these noodles are crafted one by one and given individual attention to ensure you taste every rustic bite.

  • Busiate

    These Sicilian spirals hold all of the sauce! Traditionally served with a tomato pesto from Trapani

  • Cavatelli

    Traditionally rolled along a gnocchi board for texture, mine are rolled on unglazed tiles, hand-crafted wooden boards, even cheese graters; anything that will give them a great texture!

  • Garganelli

    Rolled on a weaver's comb called a pettine, the small tubes are great with chunky sauces

  • Culurgiones

    Potato and mint filled pasta

    Best served with a simple tomato sauce

  • Orecchiette

    These "little ears" get their rough texture from being dragged across the pasta board with a knife

  • Corzetti

    Hand Carved Stamps from Tuscany are used to make these pretty pasta coins

    Pappardelle, Fettuccine, Tagliatelle
